RECIPE: Cucumber Avocado Chicken Salad

Have you ever thrown a quick meal and been absolutely floored by good it is? That was this lunch for me.

CHICKEN SALAD

pulled / shredded chicken breast

1 small avocado 

1/4 cup of greek yogurt 

1 whole cucumber

dried cranberries

OPTIONAL

sliced tomato 

whole lettuce leaves

Mix and let it soak in the refrigerator overnight (ideally 8-12 hrs) until you’re ready to eat. Add whatever toppings you like in the AM and viola!
